Vegan Sweet Potato Date Brownies

Sweet potato brownies that are vegan and delicious!

This recipe is for fudgy, gooey, vegan sweet potato brownies. The key ingredient in these brownies is sweet potato, but you can’t taste the sweet potato at all. The sweet potato makes the brownies super fudgy and delicious. I topped these brownies with a chocolate glaze, colorful sprinkles, and walnuts. The sprinkles add sweetness and the walnuts add a nice crunch.


These brownies are seriously so good and really easy to make. They’re sweetened with medjool dates, banana, applesauce, maple syrup, and chocolate chips, and this recipe yields 10 brownies. Here’s the recipe.


Ingredients

  • Medjool Dates: The first ingredient you need for this recipe is medjool dates. I always buy pitted dates so I don’t have to worry about taking the pits out. For this recipe, soak the dates in warm water until softened.
  • Cocoa Powder: The next ingredient you need is cocoa powder. I used Hershey’s Unsweetened Cocoa Powder for this recipe. Cocoa powder adds a chocolate flavor. This recipe calls for 1/4 cup of cocoa powder.
  • Peanut Butter: Peanut butter is the next ingredient you need. I used creamy peanut butter but feel free to use crunchy peanut butter instead. Peanut butter (or any nut butter) makes the brownies fudgy. This recipe calls for 1/4 cup of peanut butter.
  • Oat Flour: The next ingredient you need is oat flour. To make oat flour, blend rolled oats in a blender.
  • Sweet Potatoes: This next ingredient is key–sweet potatoes. Sweet potatoes makes the brownies fudgy and delicious. Cook the sweet potatoes in the microwave for four minutes or until softened.
  • Applesauce: The next ingredient you need is applesauce. Applesauce adds sweetness and helps with the texture of the brownies. You need 1/2 cup of applesauce for this recipe.
  • Bananas: This recipe calls for ripe bananas. Ripe bananas are typically really sweet, so I suggest using bananas that have some brown spots on them. Those are always the best kind to use in dessert recipes.
  • Almond Milk: The next ingredient is almond milk, or a nut milk of your choice.
  • Vanilla Extract: Next is a splash of vanilla extract.
  • Maple Syrup: To sweeten these brownies, you need 2 tbsp of maple syrup.
  • Chocolate Chips: The next ingredient you need is chocolate chips. The best brownies are always the ones with chocolate chips in them in my opinion. Some of my favorite vegan chocolate chips are Lilly’s mini chocolate chips and Enjoy Life mini chocolate chips.
  • Walnuts: The last ingredient you need is walnuts. I absolutely love adding walnuts to brownies. They add a nice crunch and a nutty flavor.

Ingredients
  

  • 12 pitted dates
  • 1/4 cup cocoa powder
  • 1/4 cup peanut butter
  • 1/2 cup oat flour
  • 2 small sweet potatoes
  • 1/2 cup applesauce
  • 1 mashed banana
  • 1/2 cup almond milk
  • 1/2 tsp vanilla extract
  • 2 tbsp maple syrup
  • vegan chocolate chips
  • chopped walnuts

Instructions
 

  • Preheat oven to 350°
  • Cook the sweet potatoes for 4 minutes in the microwave or until softened
  • Soak the dates for 10 minutes in hot water
  • Blend dates, cocoa powder, peanut butter, oat flour, sweet potatoes, applesauce, and almond milk in a food processor
  • Fold in desired amounts of chopped walnuts and chocolate chips
  • Bake at 350° for 35 minutes in the oven
  • Microwave chocolate chips for 45 seconds
  • Slowly pour chocolate over brownies
  • Chill in freezer for 15-30 minutes (or until hardened)
  • Cut brownies into squares
  • Enjoy!
