Vegan No Bake Peanut Butter Energy Bites
Here’s how you can make no-bake peanut butter date bites.

No-bake desserts are one of my favorite desserts to make when I’m short on time and don’t have hours to spend in the kitchen. I like to prep these on the weekends so I have them ready to go as a snack during the week. The main ingredient is dates, which are known as natures candy, and they are seriously the perfect ingredient to use when making energy bites.
How long does it take to make?
This recipe is easy to make and doesn’t take a lot of time. Soak the dates in warm water for 10 minutes (or until softened), then blend the dates, chia seeds, peanut butter, and rolled oats in a food processor. Roll the mixture into energy bites, let them chill in the fridge, and enjoy!
Ingredients
- Chia Seeds: The first ingredient you need for this recipe is chia seeds. I really like adding chia seeds to my energy bites because chia seeds are nutritious–they’re packed full of nutrients.
- Peanut Butter: The next ingredient you need is peanut butter. In this recipe, I used creamy peanut butter, but feel free to use crunchy peanut butter instead. This recipe calls for 2 tbsp of peanut butter.
- Medjool Dates: The next ingredient you need is medjool dates. I like to buy the pitted dates so I don’t have to worry about taking the pits out. Soak the dates in hot water for about 10 minutes or until softened. This recipe calls for 8 dates.
- Rolled Oats: The final ingredient you need to make these peanut butter energy bites is rolled oats. This recipe calls for 1/4 cup of rolled oats. Blend all ingredients in a food processor until the ingredients are thoroughly mixed.

- 1 tsp chia seeds
- 2 tbsp peanut butter
- 8 dates
- 1/4 cup rolled oats
Instructions
- Soak dates for 10 minutes in hot water
- Blend dates, chia seeds, peanut butter, and rolled oats in a food processor
- Roll into 13 energy bites
- Place balls on parchment paper
- Place in refrigerator for an hour
- Enjoy
