Vegan Blueberry Banana Pancakes
These blueberry banana pancakes are softy, fluffy, and super easy to make. Make these vegan pancakes for breakfast and enjoy them with fresh fruit on top.

These pancakes are dairy-free, oil-free, and plant-based. This is a breakfast you can make in under 10 minutes when you’re in a rush and in need of a quick breakfast. Fruit is also rich in antioxidants and highly nutritious.
How long does this recipe take to make?
This blueberry banana pancake recipe is super quick and easy to make. All you have to do is blend rolled oats in a blender or NutriBullet to make oat flour, combine all of the ingredients together, and cook the pancakes in a pan.
With prep time in all, you can make these vegan pancakes in about 10-15 minutes. It’s one of my go-to breakfasts because of how quick it is to make.
Are The Ingredients Needed For This Recipe Affordable?
The ingredients needed for this pancake recipe are very affordable. Rolled oats, banana, blueberries, almond milk, and cinnamon are pretty inexpensive to buy. Vanilla extract is a bit more pricey, but this recipe only calls for 1/4 tsp of vanilla extract.
Ingredients
- Banana: The main ingredient you need to make these vegan blueberry banana pancakes is 1/2 of a ripe banana. I love making banana pancakes because they’re super gooey and nutritious. Using fruit such as banana is a great way to sweeten your pancakes without adding loads of added sugar. That’s why most of my pancake recipes I use a fruit like banana, blueberries or applesauce. Using fruit in your recipes is a great alternative to sugar. These pancakes are actually really healthy and are naturally sweetened with fruit alone. Bananas are also high in potassium and have numerous health benefits, and they’re one of my favorite fruits to bake with. Banana pancakes are definitely one of my all-time favorite types of pancakes to make.
- Rolled Oats: The next ingredient you need is rolled oats to make oat flour. If you already have pre-made oat flour, you can use that, but if not, you can easily make oat flour. All you have to do is measure out your desired amount of oats and blend it in a blender or NutriBullet. I used a NutriBullet, but any blender will do. Just be sure to blend it thoroughly so there are no oat chunks left over.
- Nut Milk (I used unsweetened vanilla almond milk): Next up is almond milk. You can actually use any plant-based milk you want. I just typically buy almond milk, but any nut milk will be just fine for this recipe. Some of my other favorite plant-based milks I really like are cashew milk and oat milk. Oat milk is great to use in recipes if you want a little extra sweetness, because oat milk tastes sweeter than almond milk and cashew milk. Using a nut milk helps make the pancake batter creamier.
- Blueberries: Next you need blueberries. You can use frozen or fresh blueberries–they should melt a bit when you’re cooking them on the stove. I folded my blueberries into the batter rather than blending the blueberries into my pancake batter. Blueberries are great to add to pancakes because they taste delicious and add sweetness to the pancakes.
- Cinnamon: The only spice you’ll need for these pancakes is cinnamon. I love cinnamon because it adds such a great flavor to recipes. I always add it to my sweet recipes because cinnamon not only tastes good, but it’s also good for you.
- Vanilla Extract: The last ingredient you need for these blueberry banana pancakes is vanilla extract. You just need a splash of vanilla for this recipe (1/4 tsp).

Ingredients
- 1/2 banana
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 1/4 cup blueberries
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
Instructions
- Blend banana, oatmeal, almond milk, cinnamon, and vanilla extract in a food processor or NutriBullet
- Fold in blueberries to pancake batter
- Pour batter on stovetop or hot plate and thoroughly cook
- Add banana, blueberries, peanut butter, and cinnamon on top!
- Enjoy!
