Vegan Blackberry Baked Oats Breakfast Recipe For One

This vegan blackberry baked oats recipe is like eating dessert for breakfast. It’s the perfect easy breakfast recipe that everyone can enjoy. You just need a few simple ingredients and it takes no time at all to make. If you love baked oats as much as I do, then this recipe is a must for you.

Vegan Blackberry Baked Oats

Baked oats recipes have become incredibly popular over this past year or so. For a while I was posting a new baked oats recipe weekly. Since I’ve taken a bit of a break on making baked oats recipes, so I thought it was time to share a new one!

You only need 5 ingredients for this recipe: rolled oats, baking powder, banana, nut milk, and fresh blackberries. You can also use a sweetener of choice if you want your baked oats even sweeter.

You can top your baked oats with creamy peanut butter or a nut butter (I chose peanut butter because it’s my personal favorite nut spread to add to oatmeal), cinnamon, nuts, fruit, and more. It has a cake-like texture and it’s the perfect simple recipe to make if you’re craving a fruity breakfast.

Summer is the perfect time to make berry-inspired recipes, so let’s hop on into the ingredients you need to make blackberry baked oats.

Can I use another type of berry for this recipe?

This baked oats recipe will turn out just as delicious if you choose to use raspberries or blueberries instead of blackberries. The oat base is perfect for making other baked oats flavors, so if you prefer to make raspberry or blueberry baked oats, feel free to use another type of berry. Ingredients

  • Rolled Oats: The first ingredient you need to make this baked oats recipe is rolled or instant oats. You’ll want to blend the ingredients together to form an oat batter, so you can use any type of oats for this recipe. I love using oats as my base for recipes, and you need 1/2 cup of oats for this single-serve breakfast recipe.
  • Baking Powder: You also need 1/4 tsp of baking powder. Baking powder serves as a leavening agent and helps the baked oats rise. Since this is a single-serving breakfast recipe, you only need a small amount of baking powder.
  • Banana: Next, you need 1/2 a banana. The majority of my baked oats recipes call for banana because it adds natural sweetness and helps moisten them. I really like using banana for my fruity recipes because it creates the perfect cake-like texture.
  • Nut Milk (I used unsweetened vanilla almond milk): For my liquid base, I used unsweetened vanilla almond milk, but you could also use water or an alternative plant-based milk. Almond milk is the dairy-free milk that I typically buy, but any plant-based milk will do. I prefer to use a nut milk because it adds creaminess to the baked oats.
  • Fresh Blackberries: Lastly, you need fresh blackberries. After blending up your oats, baking powder, banana, and nut milk, you want to fold in your fresh blackberries. Berries baked in the oven taste even sweeter.
  • Sweetener of Choice: As for a sweetener, I didn’t use an additional sweetener besides the fruit. With that being said, you could add pure maple syrup or another sweetener of your choice if you want your baked oats sweeter. I sometimes drizzle maple syrup on top after it bakes in the oven, but it’s also incredibly tasty without an additional sweetener.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 1/2 banana
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/4 cup fresh blackberries

Instructions
 

  • Preheat your oven to 350°
  • Blend your rolled oats, baking powder, banana & nut milk in a blender until you form a thick and creamy consistency
  • Pour your oat batter in an oven-safe baking dish
  • Add your blackberries
  • Bake in the oven at 350° for 25 minutes
  • Let cool and enjoy!
