Toasted Pita Pocket Veggie Sandwich

Hello everyone and welcome back to my blog! In today’s post, I’m going to be sharing a super yummy recipe: a pita pocket veggie sandwich. I’ve been making a lot of breakfast/dessert recipes lately, so I wanted to include this vegan lunch idea that’s perfect for any occasion.
For lunch and dinner, I like to make nutrient-rich meals that are jammed pack with healthy ingredients. I absolutely love pita bread, so I decided to whip up this pita pocket sandwich for lunch the other day. I used whole wheat pita bread that I bought from Trader Joe’s, and if you’re in need of a good pita bread, I highly recommend checking out these whole wheat pita pockets from Trader Joe’s.
To make this pita pocket sandwich, you’ll need: whole wheat pita bread, tofu, hummus, salsa, nutritional yeast, avocado, and black beans. These ingredients are all super affordable and make for a super yummy pita sandwich. Let’s dive into the ingredients you’ll need for this recipe a bit further.
You can modify this pita pocket sandwich in any way that you want. Add additional ingredients and customize it to your liking! This is a super tasty meal that can be made in less than 10 minutes, and I’ve been making it so much lately because of how easy it is to make.
Ingredients You’ll Need:
1. Whole Wheat Pita Pocket
The first ingredient you’ll need to make this pita pocket sandwich is a whole wheat pita pocket. I bought a pack of whole wheat pita pockets from Trader Joe’s, but you can use your favorite pita bread/pita pocket. Pita pockets are one of my favorite types of breads, and it’s a nice change from traditional sandwich bread. Pita pockets are great because you can fill them with all of your favorite ingredients to create a super yummy sandwich!
2. Tofu
The next ingredient you’ll need is tofu. You’ll need to cook your tofu in a pan on low-medium heat for 10-15 minutes. I like my tofu extra crispy, but you can cook your tofu to your liking. Feel free to add olive oil if you want your tofu to be nice and crispy.
3. Hummus
You’ll also need a hummus of your choice. I used original hummus that I got from Trader Joe’s, but you can use your favorite hummus for this recipe. It’s completely up to you!
4. Salsa
Salsa is one of my favorite ingredients to add to pita pocket sandwiches. I seriously love salsa, and I add it to pretty much everything. You might not think that salsa goes well with pita bread, but surprisingly it does!
5. Nutritional Yeast
The next ingredient I added is nutritional yeast. As a vegan, nutritional yeast is a staple in my diet. It’s not only tasty, but it’s a great seasoning to add to all of your meals. I always add it to my avocado toast, nourish bowls, salads, and sandwiches. It adds a nice flavor to any dish you make!
6. Avocado
I also added avocado. Avocado is another staple food of mine. I add avocado to a lot of my dishes, including salads, nourish bowls, and sandwiches. It’s really yummy and nutritious, which is why I like to incorporate avocado into my meals.
7. Black Beans
The last ingredient you’ll need is black beans, or another bean of your choice. You could also use kidney beans, garbanzo beans, etc. Black beans are one of my favorite types of beans, but I also really like kidney beans and garbanzo beans.

Ingredients
- 1 whole wheat pita pocket
- 1/4 cup chopped tofu
- 1 tbsp hummus (original)
- 2 tbsp salsa
- 1 tsp nutritional yeast
- 1 tbsp avocado
- 2 tbsp black beans
Instructions
- Cook the tofu in a pan on low-medium heat for 10-15 minutes.
- Add all of your ingredients to your pita pocket sandwich and enjoy!

Final Thoughts
This pita pocket sandwich recipe is vegan, healthy, and super tasty! It’s one of my new favorite meals, and I’ve been making it so much lately. It’s also a really quick recipe to make. It only took me about 10 minutes to make, and you don’t need to allow much time for it to cook either. Just cook your tofu, toast your pita bread, and add all of your favorite ingredients! It’s that easy.
