No-Bake Vegan Date Brownie Bars
Delicious vegan date brownie bars that will satisfy your sweet tooth in no time. These no-bake vegan date brownie bars are the real deal. This is my latest concoction and they are super delicious. They’re chewy, gooey, and moist. What can be better than that?

Clean, raw, and nutritious brownies that are made with less than 5 ingredients. Yes, you heard that right. These brownies have very little added sugar. The only added sugar is from the chocolate chips that were used to make the frosting, but you can certainly forgo the chocolate chips or use less than the recipe calls for.
Only 4 ingredients in these bad boys. You can also make a refined-sugar free version by forgoing the chocolate chips and simply using peanut butter as a frosting for the brownie bars. Either way they’re super delicious and a perfect on-the-go treat. If you love chocolate and peanut butter, you’ll absolutely LOVE these brownie bars.
There’s more. The best part is that they’re no-bake brownie bars. They take less than five minutes to make. You might have to wait a little bit for the chocolate frosting to harden in the freezer, but it’s worth the wait. These brownies do not disappoint.

Ingredients you’ll need:
1. Pitted Dates
The first ingredient you’ll need to make these no-bake vegan date brownie bars is pitted dates. I like to use pitted dates so I don’t have to worry about forgetting to take the pits out of the dates.
For the brownie base, dates are the only ingredient you need to sweeten these brownies. I love using dates as a sweetener for dessert recipes because dates are super sweet and are commonly referred to as natures candy.
Because dates are so sweet, you don’t need any additional sweetener for the base. The only other sugar I used in this recipe was chocolate chips for the icing, but you can forgo the icing if you just want to make the brownie bars without an icing on top.
Either way, these date brownie bars taste delicious and are definitely worth making. It’s the perfect treat to make during the holidays with your friends and family.
2. Hershey’s Unsweetened Cocoa Powder
You’ll also need Hershey’s Unsweetened Cocoa Powder to make the base of the brownie bars. I like using unsweetened cocoa powder because there is no sugar in it. Although it’s very bitter, combined with the dates, the brownies don’t taste bitter at all.
This cocoa powder gives the vegan brownie bars a nice chocolate flavor and is a staple in making these brownies. However, feel free to use a sweetened cocoa powder if you prefer!
3. Creamy Natural Peanut Butter
The next ingredient is creamy natural peanut butter, which you’ll need for both the brownie base and the icing. Some of my favorite peanut butters are Krema and Smucker’s Creamy Natural Peanut butter. These two peanut butters are all natural and don’t contain any added oils or sugar. They simply contain just peanuts, or peanuts and salt.
Peanut butter is one of my favorite foods, and is one of my go-to ingredients for making dessert. Peanut butter is rich in protein and healthy fats, so it’s a great ingredient to use when you’re baking.
4. Vegan Chocolate Chips
Lastly, you’ll need vegan chocolate chips to make the icing. Some of my favorite vegan chocolate chips are Lilly’s and Enjoy Life’s baking chips. They’re chocolate chips that are dairy-free and relatively low in sugar.
They’re a bit more expensive than other chocolate chips you can buy, (likely because these are non-dairy baking chips) however, they last a long time if you use them sparingly. You can find vegan chocolate chips at almost every grocery store, and you can use any brand of chocolate you want.
How to make these vegan no-bake brownies:
First, you have to make the brownie base. Soak the pitted dates in hot water for about 10 minutes, or until the dates are softened. If the dates are hard, it will be more difficult to blend.
After the dates are finished soaking and they’re nice and soft, blend the dates, cocoa powder, and creamy natural peanut butter in a food processor until the ingredients are thoroughly mixed together.
Next, roll the brownie batter on a piece of parchment paper so the batter doesn’t stick to the plate. Once the brownie batter is evenly spread across a plate, you can make the icing.
For the icing, you want to melt the chocolate chips in the microwave for about 45 seconds, or until the chocolate is fully melted. Be sure that there are no chocolate chunks left.
You can then mix in the peanut butter and slowly add the icing mixture to the brownie bars.
Put the brownie bars in the freezer for about 30 minutes and enjoy with a tall glass of almond milk!

- 16 pitted dates
- 4 tbsp cocoa powder
- 2 tbsp peanut butter
Icing
- 1 tbsp peanut butter
- 2 tbsp vegan chocolate chips
Instructions
Brownie Base
- Soak dates in hot water for 10 minutes
- Blend dates, cocoa powder, and peanut butter in a food processor
- Roll brownie batter on parchment paper
Icing
- Melt chocolate chips in the microwave for about 45 seconds
- Mix in the peanut butter
- Slowly pour chocolate peanut butter mixture over brownie batter
- Put in freezer for 30 minutes
- Cut in squares and enjoy!

Final Thoughts
These vegan brownie bars are seriously so delicious and super easy to make. I want to continue to make no-bake desserts for people who don’t have a lot of time to bake. No-bake recipes are some of my favorites to make because they’re less time consuming!
For this recipe, it takes about 10-15 minutes to prep. After that, you simply let the brownies chill in the freezer for about 30 minutes until they’re done and ready to eat. You have to have a little bit of patience as they’re hardening in the freezer, but besides that, you don’t have to spend hours in the kitchen baking.
