Maple Walnut Banana Bread
How to make moist vegan maple walnut banana bread.

It’s been a little while since I’ve shared a banana bread recipe, so I thought that this was the perfect time to post this maple walnut banana bread recipe that I made a few days ago. If you’re someone who really likes banana bread, then you should definitely give this recipe a try. It’s moist, gooey, and delicious, and has the perfect amount of sweetness to it.
Ingredients
1. Whole Wheat Flour
The first ingredient you need is whole wheat flour. I like to use a blend of whole wheat flour and oat flour in some of my dessert recipes.
2. Oat Flour
The next ingredient you need is oat flour. I use oat flour in so many of my recipes because it’s not only a great ingredient to use for baking, but it’s affordable.
3. Baking Powder & Baking Soda
The next ingredient you need is 1 tsp of baking soda and 1 tsp baking powder. These ingredients help the banana bread rise.
4. Banana
Next, you need 4 medium ripe bananas. You can whisk together all of the wet ingredients. Bananas are great to use for baked goods and loafs because bananas (especially ripe ones) are super sweet and add sweetness to any recipe.
5. Cinnamon
The next ingredient you need is cinnamon. Cinnamon has a strong, distinct flavor, and the flavors all come together nicely once it’s baked in the oven.
6. Almond Milk
Next, you need almond milk, or a plant-based milk alternative. Nut milk helps make the banana bread moist, which is why I used almond milk instead of water. You could also use soy milk, silk milk, or oat milk if you don’t want to use almond milk. I used unsweetened vanilla almond milk for this recipe.
7. Walnuts
The next ingredient you need is walnuts. Adding walnuts to banana bread adds a nice crunch. The walnuts get toasted in the oven and adds a nice flavor. You can also top the banana bread off with additional walnut pieces.
8. Maple Syrup
In addition to banana, I used pure maple syrup to sweeten my banana bread. Maple syrup is super sweet and pairs well with bananas.
9. Chocolate Chips
The last ingredient you need is vegan chocolate chips. I folded chocolate chips into my banana bread and it added the perfect sweetness. I also think banana bread pairs well with chocolate.
Maple Nut Banana Bread
Ingredients
- 1 cup whole wheat flour
- 1 cup oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 4 medium bananas
- 1/2 tsp cinnamon
- 1/4 cup almond milk
- 1/4 cup chopped walnuts
- 1/4 cup + 2 tbsp pure maple syrup
- 1/4 cup chocolate chips (vegan)
Instructions
- Preheat oven to 350°
- Mash 4 medium bananas in a large mixing bowl
- Add remaining wet ingredients to the mixing bowl: almond milk and pure maple syrup
- Add dry ingredients to a separate large mixing bowl: whole wheat flour, oat flour, baking powder, baking soda, and cinnamon
- Slowly fold wet ingredients into dry ingredients
- Fold in walnuts and vegan chocolate chips
- Lightly grease a loaf pan with olive oil
- Pour banana bread batter into loaf pan
- Sprinkle additional walnut pieces on top
- Bake in oven at 350° for 40 minutes

This is the perfect recipe to make if you’re in the mood for a sweet treat. This maple banana nut bread makes about 10 servings, so it’s great to meal prep on the weekends so you have a nice treat during the week.
