Healthy Vegan Chocolate Cookie Bars Recipe

These chocolate cookie bars are vegan, healthy, and delicious.

I recently made a batch of vegan chocolate chip cookie bars, and they turned out incredible. This dessert recipe has a cookie base with a delectable chocolate frosting. I added colorful sprinkles on top to finish it off.


Ingredients

  • Rolled Oats: The first ingredient you need to make these delicious vegan cookie bars is rolled oats. Blend 1 cup of rolled oats in a blender to make oat flour.
  • Peanut Butter: The next ingredient you need is creamy peanut butter. For this recipe, you need 3 tbsp of peanut butter for the cookie base, as well as 1 tsp for the frosting.
  • Vanilla Extract: The next ingredient you need is vanilla extract. This recipe calls for 1/2 tsp of vanilla extract for the cookie base, and 1/2 tsp of vanilla extract for the chocolate frosting.
  • Maple Syrup: Next, you need 2 tbsp of maple syrup for the cookie base, and 2 tsp of maple syrup for the frosting.
  • Mini Chocolate Chips: The next ingredient is mini chocolate chips. I love adding mini chocolate chips to dessert recipes. Some of my favorite vegan chocolate chips are Lilly’s and Enjoy Life’s mini chocolate chips.
  • Coconut Flour: In addition to rolled oats, you need 2 tbsp of coconut flour for the cookie base. I like using coconut flour in my recipes because it creates the perfect consistency.
  • Almond Milk: The next ingredient you need is almond milk, or a nut milk of your choice. You need 1/4 cup + 2 tbsp of almond milk for the cookie base, as well as 2 tbsp for the frosting.
  • Cocoa Powder: The last ingredient you need to make the frosting is cocoa powder. Cocoa powder gives the frosting a nice chocolate flavor. I used Hershey’s Unsweetened Cocoa Powder.
  • Sprinkles (Optional): The last ingredient is sprinkles, which is completely optional. I sprinkled a few of these colorful round sprinkles I found at my local grocery store on top of the cookie bars, but you can top these cookie bars with any toppings you want.



Directions



The Base:

First, preheat your oven to 350°.

Next, blend 1 cup of rolled oats in a blender to make oat flour.

Then, combine all the dry ingredients in one bowl: rolled oats, coconut flour, and mini chocolate chips.

Combine all the wet ingredients in a separate bowl: peanut butter, vanilla extract, maple syrup, and almond milk.

Combine the dry ingredients to the wet ingredients and mix thoroughly.

Spray a brownie pan with olive oil spray.

Fill the pan with the cookie base.

Bake in oven at 350° for 10 minutes.


The Frosting:

First, add the wet ingredients in one bowl: almond milk, vanilla extract, maple syrup, and peanut butter.

Slowly add the cocoa powder to the mixture.

Add the frosting to the cookie base.

Add sprinkles to the cookie bars.

Chill in the fridge for twenty minutes.

Cut into squares and enjoy!

  • Combine all dry ingredients in one bowl: rolled oats, coconut flour, and mini chocolate chips
  • Combine all wet ingredients to a separate bowl: peanut butter, vanilla extract, maple syrup, and almond milk
  • Slowly combine dry ingredients to wet ingredients
  • Spray brownie pan with olive oil spray
  • Add cookie mixture to pan
  • Bake at 350° for 10 minutes

Frosting

  • Add wet ingredients to one bowl: almond milk, vanilla extract, maple syrup, and peanut butter
  • Slowly add in cocoa powder and mix thoroughly
  • Add frosting to cookie base
  • Chill in fridge for twenty minutes
  • Enjoy!
