Healthy Vegan Blueberry Waffles

These delicious blueberry waffles are vegan and made with only five ingredients. This is the perfect easy breakfast that’s sweet and filling. Enjoy these waffles for breakfast any day of the week!

Vegan Blueberry Waffles

Today’s recipe is for vegan blueberry waffles. I’ve been into making waffles lately, and these blueberry waffles are definitely worth making. This recipe is incredibly easy to make and it calls for five simple ingredients. You need rolled or quick oats, baking powder, banana, a nut milk of your choice, and frozen blueberries.

I used my Dash mini waffle iron to cook these waffles and it took about four minutes to cook each waffle. This recipe yields one serving and makes two small-medium waffles.

I topped my waffles with blueberries, cinnamon, creamy peanut butter, and a vegan coconut whip cream. The waffles are naturally sweetened with banana and blueberries, but feel free to drizzle some maple syrup on top for a sweeter breakfast.


Ingredients

  • Rolled or Quick Oats: The first ingredient you need is rolled or quick oats. I often buy quick oats because I prefer using quick oats in my recipes, but you can use rolled oats as well. I like using oats in my pancake and waffle recipes instead of flour.
  • Baking Powder: Next, you need 1/4 tsp of baking powder. Baking powder is an essential ingredient when making waffles. It helps the waffles rise.
  • Banana: Next, you need 1/4 of a banana. I used banana in this recipe to make the waffles sweeter and to make the batter creamier. I love adding banana to my pancake and waffle recipes because it helps make the perfect batter consistency. It also adds natural sweetness.
  • Nut Milk: The next ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk, but you can also use soy milk, silk milk, oat milk, or another plant-based milk. You can also use water, but I like to use a nut milk because it makes the batter creamier.
  • Frozen Blueberries: The last ingredient you need is frozen blueberries. After you blend the rolled or quick oats, baking powder, banana, and nut milk, you want to fold in the frozen blueberries. I added 1/4 cup of frozen blueberries because I love blueberries and I wanted the waffles to have a strong blueberry flavor.

Toppings:

  • Additional Blueberries: I heated some frozen blueberries up in the microwave and drizzled the blueberries on top.
  • Creamy Peanut Butter: I also added creamy peanut butter on top. I use the salted creamy peanut butter from Trader Joe’s, but you can use a nut butter as well. I also really like almond butter, and I often add almond butter to my pancake and waffle recipes.
  • Cinnamon: The next topping I added is cinnamon. I absolutely love cinnamon and I sprinkled a dash of cinnamon on top of my blueberry waffles.
  • Vegan Coconut Whip cream: The last topping I added was this vegan coconut whip cream that I got from Trader Joe’s. I love adding a vegan whip topping because it adds additional sweetness.

1. NutriBullet Pro Blender: For this recipe, I used my NutriBullet to blend the ingredients together. It’s my go-to blender to use for recipes. You can purchase it on Amazon for really cheap. 

2. Orgain Organic Plant-Based Protein Powder Creamy Chocolate Fudge: One of my favorite vegan protein powders is by the brand Orgain. They have a plant-based protein powder in the creamy chocolate fudge flavor which I’ve used in some of my recipes. I use the Orgain protein powder in all of my recipes that call for protein powder.

3. Dash Mini Pancake Maker: I use my Dash mini griddle for almost all of my pancake recipes. It’s really inexpensive and it makes making pancakes incredibly easy. It only takes about 2 minutes to cook each pancake as well, and it’s compact, so it’s great to bring with you when you travel.

Ingredients
  

  • 1/2 cup rolled or quick oats
  • 1/4 tsp baking powder
  • 1/4 banana
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/4 cup frozen blueberries (plus more for the topping)

Instructions
 

  • Blend your rolled or quick oats, baking powder, banana & nut milk in a blender or NutriBullet to form a thick and creamy consistency
  • Fold in your frozen blueberries
  • Cook each waffle for four minutes in a waffle maker (I used my Dash mini waffle iron)
  • Add toppings and enjoy!
