Easy Vegan Peanut Butter Banana Baked Oats Single Serve Recipe

Peanut Butter Banana Baked Oats
I’m back to share another baked oats recipe: peanut butter banana baked oats. These peanut butter banana baked oats are creamy, sweet, and easy to make. Although I’ve made quite a few baked oats recipes already, I didn’t have a recipe for peanut butter banana baked oats.
Peanut butter is high in protein and rich in healthy fats, while banana is rich in potassium. Add oats, and you’ve got a highly nutritious breakfast option.
For this recipe, you need rolled oats, banana, a nut milk of your choice, creamy salted peanut butter, and baking powder. It’s a super simple recipe that calls for few ingredients. This is a great recipe to have for breakfast. Add your favorite toppings and enjoy! I added banana slices and creamy peanut butter on top. You could also add nuts, seeds, or chocolate chips.
How long does this recipe take to make?
You can make these peanut butter banana baked oats in around 30 minutes. It takes about 10 minutes to prep the recipe, and 20 minutes to bake in the oven.
Ingredients:
- Rolled Oats: The first ingredient you need is either rolled oats or instant oats. Since you’ll be blending all of the ingredients together in a blender or NutriBullet, you could use either rolled oats or instant oats. I almost always buy instant oats, so I added 1/2 cup of instant oats to my NutriBullet. You can easily find rolled oats at any grocery store, and it’s always super cheap. I typically make my own oat flour because it’s far cheaper than buying it pre-made.
- Nut Milk: The next ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk, which I purchased from a local grocery store. Almond milk is my personal favorite nut milk to use, but you can use any nut milk you want. You could also use soy milk, silk milk, or oat milk. I like using a plant-based milk in my baked oats recipes instead of water because it makes it creamier, but water will work as well.
- Banana: You also need 1/2 of a banana. Using fruit like bananas in recipes is a great way to make them sweeter without adding added sugar to the recipes. Bananas are naturally really sweet, so you really don’t need an additional sweetener for this baked oats recipe. Some other fruits I use to sweeten my recipes include dates and applesauce. I also added some additional banana slices on top before baking it in the oven. This made the banana slices really gooey and sweet.
- Creamy Salted Peanut Butter: You also need creamy peanut butter. I always buy a natural peanut butter that contains only peanuts and salt. The peanut butter I used in this recipe was a salted peanut butter. A few of my favorite creamy peanut butters are Krema and Smucker’s Creamy Natural Peanut Butter. For this recipe, I added 1/2 tbsp of creamy peanut butter to the oat batter and blended it in a NutriBullet along with the other ingredients. I also added another scoop of peanut butter on top after I baked it in the oven because I’m a huge fan of peanut butter. Peanut butter is also a great source of protein and it makes the breakfast more filling.
- Baking Powder: You need 1/4 tsp of baking powder for this recipe. Baking powder helps make the baked oats rise.

Vegan Peanut Butter Banana Baked Oats
Ingredients
- 1/2 cup rolled oats
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 1/4 banana
- 1/2 tbsp creamy salted peanut butter
- 1/4 tsp baking powder
Toppings
- 1 tsp creamy salted peanut butter
- 1/4 banana
Instructions
- Add the rolled oats, nut milk, banana, baking powder and creamy peanut butter to a blender or NutriBullet and blend until there is a thick and creamy consistency
- Pour the oat batter in an oven safe dish
- Add the banana slices on top
- Bake in the oven at 350° for 20 minutes
- Add creamy peanut butter on top and enjoy!
