Chocolate Fudgy Vegan Muffins Made With Sweet Potato

Vegan Chocolate Fudgy Muffins Made With Sweet Potato

These vegan chocolate muffins are made with sweet potato. I know it might sound like a strange ingredient to add in chocolate muffins, but I can assure you that these muffins are delicious. I’ve made sweet potato brownies before that turned out great, so I decided to make chocolate muffins with sweet potato. These muffins are fudgy, gooey, and the perfect healthy treat to make when you’re craving something sweet. Adding sweet potato creates the perfect texture for these muffins, and you can’t even taste the sweet potato.


All you need for this recipe is rolled oats, unsweetened cocoa powder (I used Hershey’s), baking powder, unsweetened applesauce, salted creamy peanut butter, maple syrup, a nut milk of your choice (I used unsweetened vanilla almond milk), sweet potato, and dark chocolate chips. Cook the sweet potato in the microwave for about 4 minutes or until softened. I measured out 1/2 cup of cooked sweet potato.


Ingredients

  • Rolled Oats: For this recipe, you need 1 cup of rolled oats. Blend the oats in a blender or NutriBullet to form the oat flour. I always make my own oat flour because of how easy it is, but if you have pre-made oat flour, feel free to use that as well. I love using oats in my recipes because it’s an affordable ingredient.
  • Hershey’s Special Dark Unsweetened Cocoa Powder: Next, you need Hershey’s Special Dark unsweetened cocoa powder. This ingredient gives the muffins a strong chocolate flavor. I love chocolate, and I always use cocoa powder in my chocolate dessert recipes.
  • Baking Powder: Next, you need 1/2 tsp of baking powder. Baking powder acts as a leavening agent and helps the muffins rise.
  • Unsweetened Applesauce: To sweeten these muffins, I used 1/3 cup of unsweetened applesauce. You can’t taste the apple flavor, but applesauce helps moisten the muffins and gives them a better consistency.
  • Salted Creamy Peanut Butter: You also need 1/4 cup of creamy salted peanut butter. Peanut butter helps moisten the muffins and I almost always use a nut butter in my dessert recipes.
  • Maple Syrup: To add additional sweetness, you need 1/4 cup of pure maple syrup. This added the perfect amount of sweetness paired with the vegan dark chocolate chips.
  • Nut Milk: For the liquid, you need 1/2 cup + 2 tbsp of nut milk. I used unsweetened vanilla almond milk, but you can use your favorite plant-based milk. You can also use water if you prefer. I like using a nut milk because it makes the batter creamier.
  • Sweet Potato: Next, you need cooked sweet potato. You’ll want to cook a small sweet potato in the microwave for around 4 minutes or until softened. I measured out about 1/2 cup of cooked sweet potato.
  • Vegan Dark Chocolate Chips: Lastly, you need 3 tbsp of dark chocolate chips. I folded the chocolate chips into the muffin batter and sprinkled some more on top for additional sweetness. Feel free to add as many chocolate chips as you want.

Ingredients
  

  • 1 cup rolled oats
  • 1/4 cup unsweetened dark cocoa powder
  • 1/2 tsp baking powder
  • 1/3 cup unsweetened applesauce
  • 1/4 cup salted creamy peanut butter
  • 1/4 cup maple syrup
  • 1/2 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/2 cup mashed sweet potato (about 1 small sweet potato)
  • 3 tbsp dark chocolate chips (vegan)

Instructions
 

  • Preheat your oven to 350°
  • Blend your oats in a blender to form oat flour
  • Add your oat flour, unsweetened dark cocoa powder, and baking powder in a large mixing bowl and mix until all of the ingredients are thoroughly combined
  • Whisk together your unsweetened applesauce, creamy salted peanut butter, maple syrup, nut milk & mashed sweet potato in a separate mixing bowl
  • Add your wet ingredients into your dry ingredients
  • Fold in your dark chocolate chips
  • Lightly grease your muffin pan with olive oil
  • Pour your batter in the muffin pan to form 8 muffins
  • Top your muffins with additional chocolate chips
  • Bake in the oven at 350° for 20 minutes
  • Let cool and enjoy!
